The difference is Dragon Age's core is story and the way it branches and changes so it is suitable for that treatment.
Monster Hunter so isn't about story. It's about equipping to kill then killing. You can make a story driven game by all means, but it won't be an MH game - it will be a different game in the MH universe.
To be honest, I don't think it's the best candidate - although you could run with item collection/creation as far as it goes.

Well, at the time this crossed my mind I was thinking of writing an original game. And while typing up some notes, strong MH elements started seeping in. It got to the point where I thought "sod it, I'll see how a Monster Hunter RPG will go."
Maybe Monster Hunter isn't the best candidate for a full RPG (possibly a dungeon crawler style game though). But it doesn't mean I can't milk the hell out of it for inspiration.

The Monster Hunter series actually has a lot of backstory and features complex worlds (see e.g. the official artbooks featuring concept artwork and detalied info on the series' universe) but little of that made it past the concept stage and what did got streamlined into journals, quest descriptions and NPC chat in the town areas.
There is a lot of potential for that story being used in other gaming forms, considering how well Monster Hunter also works as card games, and some of us have already been experimenting a while with Monster Hunter as a Pen and Paper RPG. Even if a bit more complex, using figurines and, for the occasion, simplified Warhammer-like rules does help solving the teamwork tactics aspect of fights against multiple enemies and/or in complex environments and it can be fun setting up the hunting areas and situations with figurines and templates (even the first official card game more somewhat allowed you to build your own hunting maps from templates). The rest of the roleplaying aspects can be played with simple pen and paper and can be made as simple or complex as desired since all the official weapon/armour stats, monster info and environments are easily found in database format.
I'd gladly see what others have in mind for such a kind of Monster Hunter inspired game and I'd even more gladly see the community working together on such a fanmade project.

'tis why I'm not abandoning the project just yet.
A few things will have to be added, maybe changed, and possibly removed. An example being; how do we determine a character's evasion, block, and hit rates. In the video game, those came down to the player, but that's not entirely possible in a RPG.
RPGs are generally based on a setting, not so much the mechanics. Though I'd like to take as much from the games as possible, not everything will translate well.
And turning this into a community project would be awesome. Hopefully there will be enough takers.
I've started reading the manga for insight (Monster Hunter Orage), so far I wouldn't rate it as a great manga though.
But so long as it serves. I've also read some Neozoic, a comic by Red 5 Comics. It seems to have strong Moster Hunter influences, and should a strictly MH RPG not take off, I've got another source for my own.

Calm down. If anything, "Monster Hunter" is a lifestyle and there are already two official (tabletop) card games based on the series, the old Monster Hunter Trading Card Game and the newer Monster Hunter Hunting Card, so you can't say a tabletop roleplaying game would be such a stretch. Personally, I welcome any kind of Monster Hunter game that has many players working together (and occasionally against each other  ) and I am curious to see how the lore and gameplay of the series could be lived and collectively told through a group of adventurers and possibly experienced roleplayers (I have seen many other series including the videogame series Castlevania and the anime series Slayers being turned into very interesting tales during role playingsessions).

Turbine did make an MMO based on D&D. But originaly D&D is a role playing game, and these are played from books, as a group (usually of 4 or so people) at a table. Though D&D is the best known example of these sorts of games, there are many out there. Star Wars has had several versions, Dragon Age, Mouse Guard, a company called Green Ronin is also publishing a role playing game based on DC Comics (Superman, Batman and others).
Even World of Warcraft has a role playing game based on the MMO (doing it the opposite way to D&D).
If D&D didn't kick-start the industry, many video games probably wouldn't have been made. The Monster Hunter video games also have mechanics similar to what are found in many tabletop role playing games.
In a book, you tend to have a few dozen pages of actual rules, then the majority of content beyond that is character development, equipment, and monster information. Since this wouldn't be sold, but rather available for free as a download, there's no need to create more than one book. My biggest gripe with D&D is the number of books they push out, it just makes things more difficult.
