Baiscly everyone who is a zombie has a type of parasite inside them. When you kill a queen, shes dies and all the parasites in the vicinity die with her. And they die because they are bonded to her due to her being their queen.
I'll go in to detail, SPOILERS AHEAD if you've not beat the first game:
The wasps are a byproduct of experimentation to increase the meat obtained from cattle, how this works isn't explained, but the process involves the wasps injecting larvae in to a living being, however, the wasps somehow leak from the facility where they where developed, infecting a small village called Santa Cabeza (sp?) And turning most of the populace in to zombies and infecting numerous children, the militarty covers up the incident, prompting a survivor from the village, a man called Carlito, to expose them by causing an outbreak in Willamette (Causing the events in Dead Rising).
Carlito also gathered the infected children from the village and put them up for adoption, resulting in effective zombie timebombs across the country, most of which probably turned, resulting in the events of Dead Rising Case Zero and Dead Rising 2.
The larvae of a queen infects people by injecting eggs in to the bloodstream, commonly from the blood of a zombie in to the bite wound of a victim, once the eggs hatch, the person turns within a matter of hours, resulting in a zombie. At 7pm of each night, the larvae activate, irritating the zombie host and making them considerably more hostile, since they seem to glow at night, the light from their tails causes a zombies eyes to glow red.
A queen in the process of injecting a zombie with eggs can be found embedded in the back of the neck, oddly enough, whilst it is in the zombie, the zombie becomes docile and won't attack bar vomiting blood on a victim.
Medicines that stem the infection, known as Zombrex, work by preventing the eggs from hatching within a person, meaning their turning, at the very least, delayed. The hormones from a queen are used to make this medicine, and can also be used as a short-life zombie repellent.
As Rattamauled explained before, these queens are also a heirarchey over the rest of the larvae, the death of a queen sends the larvae berserk, resulting in the zombies death in turn, but they have to be close.
And that's pretty much all I know about them.

Exactly what Dante said, all the zombies are infected with a larvae inside them, which is commanded by the queen, kill the queen and the larvae in their heads you could say "Commit suicide" causing zombies heads to explode, therefore killing the host.
Its exactly the same as "cut off the head of the snake and the body dies" scenario.
This is also noticable i think about night time when you use the queen at night you notice glowing green larvae occasionally jumping about trying to hurt/infect you? before they eventually die from possibly not having a warm safe enviroment aka the human/zombie body.
The reason they're green at night is because as Dante said at night they are a lot stronger and more active whereas in the day where they just lay dormant, its like Humans at the end of a day we're very tired and groggy and not so active but at the peak of the day we are at our sharpest and strongest, same with the grubs.
I remember him saying that but when it comes to comparing one game/anime to another sometimes it doesn't click, but as the saying goes you learn something new every day.
